  • 1 head of cabbage, chopped

  • 2 carrots, peeled and chopped

  • 2 celery stalks, chopped

  • 1 onion, chopped

  • 2 garlic cloves, minced

  • 1 can of diced tomatoes

  • 6 cups of vegetable broth

  • 1 tablespoon of olive oil

  • Salt and pepper, to taste


  • Heat the olive oil in a large pot over medium heat. Add the onions and garlic and cook until the onions are translucent.
  • Add the carrots and celery and cook for another 5 minutes.
  • Add the chopped cabbage and stir to combine.
