Slow Cooker Pork Carnitas Burrito Bowls

These carnitas burrito bowls are one of Fit Foodie Finds’ most popular meal-prep recipes! So many of you have made this recipe and we recently gave it a bit of a makeover to make it even better.

We love bowl recipes because they are composed of many different things all in one! This carnitas bowl recipe is made up of a few of our favorite recipes.

[ For 4 to 5 people ] [ Preparation time : 12 minute – Cooking time : 15 minutes ]

 

Ingredients

Pork Carnitas

6-8 lb pork butt
2 tablespoons salt
1 tablespoon freshly ground pepper
1 tablespoon oregano
1 tablespoon chili powder
1 onion, chopped
4 garlic cloves, crushed
1 jalapeno, seeded and chopped
1 cup orange juice
1 lime, juiced
1/3 cup dry white wine like pinot grigio

Black Bean Cilantro Lime Rice

1 cup long grain or basmati white rice
water per package directions
1 tablespoon lime juice (juice from 1/2 of a lime)
3 tablespoons cilantro, chopped
1 15.5 oz can black beans, drained and rinsed

Toppings for Burrito Bowls

Chopped peppers
chopped avocado
corn
Spicy Pickled Red Onions
Guacamole
Salsa
Chopped cilantro

 

Preparation Method

Pork Carnitas

  1. Trim the excess fat from the pork. Place in slow cooker.
  2. Combine spices; rub all over the meat.
  3. Top with onions, garlic, jalapeno.; then add wine, orange, and lime juice to slow cooker.
  4. Cook for 10 hours on LOW*
  5. The meat will be falling off the bone when it’s ready.
  6. Shred meat and return it to the slow cooker.
  7. Preheat your broiler.
  8. Using rimmed metal baking sheets, add shredded meat in a single layer and drizzle a little of the juices from
  9. the slow cooker over the meat.
    Crisp meat.

Black Bean Cilantro Lime Rice

  1. Rinse rice.
  2. Add rice and water to the pot, bring to a boil, then reduce the heat to a simmer, cover and continue cooking for 15 minutes.
  3. Turn heat off, and let rice sit for 5 more minutes.
  4. Mix in lime juice, chopped cilantro, and black beans.

Burrito Bowls

  1. Add Black Bean Cilantro Lime Rice to bottom of the bowl.
  2. Add Pork Carnitas.
  3. Top with your favorite toppings..chopped peppers, avocado, corn, spicy pickled red onions, guacamole, salsa, chopped cilantro.
