Easy Creamy Cucumber Salad Recipe

by Friend Recipes

A delicious summer classic at every picnic, barbecue, or party is the Creamy Cucumber Salad. A simple sour cream dressing wraps crunchy cucumbers and fragrant summer dill. This quick meal is made from things you probably already have on hand.

You will love the taste of this simple cucumber salad, whether you grew up with it or are experiencing it for the first time!

THE MOST EFFICIENT WAY TO MAKE CREAMY CUCUMBER SALAD

Cut the cucumbers in half and then lengthwise across the middle. Scoop out the center seeds with the tip of a spoon. Place the red onion slices in a colander and thinly slice each half. Sprinkle with salt and leave in the sink for at least 30 minutes or until the water runs clear.

Make the dressing: Meanwhile, combine the sour cream, mayonnaise, white wine vinegar, dill, sugar, and black pepper in a medium bowl.

When the cucumbers and onions are done, drain the excess water by tapping the colander on the bottom of the sink a few times, then pat the vegetables dry with a large wad of paper towels or a clean tea towel. Toss the vegetables in the dressing to coat. Refrigerate until ready to serve.
